Dr. Rashid has a PhD in Industrial and Agricultural Technology from Iowa State University, USA and completed his Master’s degree of Food Quality Management with honours at the University of Salford, Manchester, UK and Bachelor degree in Food Science and Technology from Sokoine University of Agriculture, Morogoro, Tanzania and Post-doctoral of Food Security from Lund University, Sweden. He is Head and Senior lecturer at the Department of Food Science and Agroprocessing, School of Engineering and Technology, Sokoine University of Agriculture (SUA), Morogoro, Tanzania. He is a current chair of Agriculture and Food Standard Divisional Committee (AFDC) Tanzania Bureau of Standards (TBS) and a chair of National CODEX committee. His research focus is on post-harvest management, stored product protection, food safety (mycotoxins), food quality management, and new product development. He teaches courses related to food science, food quality assurance, food toxicology, food storage and handling, food packaging, and food processing and preservation to both under and post graduate levels. His community outreach work is with small and medium food processors and smallholder farmers in Tanzania. It aims at fostering their food safety and processing skills, and postharvest management techniques. He has published several papers in international peer reviewed journals and currently supervises five (5) PhD students and eleven (11) MSc Students. In addition, he has facilitated a number of trainings, short-courses and workshops for food safety management, post-harvest management of cereals, fruits and vegetables and value addition of agricultural produces.
