Prof. Lilian Kaale is a highly accomplished academic with a Ph.D. degree in Food Science and Technology. She is serving as the head of the Department of Food Science and Technology at the University of Dar es Salaam since 2016. She has accumulated a decade of experience in the same department. During her tenure, Prof. Kaale has demonstrated her commitment to academic excellence by supervising both Ph.D. and master’s students and contributing significantly to the field through numerous publications in local and international journals. Her primary areas of research expertise lie in Postharvest Technology, Food Processing (specifically food value addition and product development), and the study of antimicrobial substances for food preservation and safety. Prof. Kaale’s influence extends beyond the academic setting, as she has gained extensive international experience by actively participating in conferences and workshops focused on Food and Nutrition Security. Her dedication and contributions to the field have been recognized both nationally and internationally, as she has received several certificates of excellence, acknowledging her outstanding work within and outside the country.
In the academic year 2022–2023, Prof. Kaale was honored with the prestigious award for best impact researcher of the year at the university level, further highlighting her significant impact in her area of expertise. As a testament to her leadership and project management skills, Prof. Kaale serves as the Project Investigator on projects funded by reputable organizations such as the World Bank and UNESCO-IDRC. Additionally, she has secured several projects funded by the Tanzania Commission for Science and Technology (COSTECH) and University of Dar es Salaam, demonstrating her ability to successfully lead and execute research initiatives. Prof. Kaale has also implemented several consultant work with international organizations such as UNICEF, WFP and World Bank. Prof. Kaale is a Member of the Agriculture and Food Division Committee (FDC), at Tanzania Bureau of Standards (TBS). She also serves as Board Member at the School of Engineering and Technology, Sokoine University of Agriculture (SUA).
