Currently the chairperson for Tanzania Association of Food Scientists and Technologists (TAFST), Mercy Mmari has over a decade of experience in food science and nutrition sector, specifically focusing on food processing, food fortification, research and child nutrition.

She is an FSSC 22000 Lead Auditor certified by the CQI and IRCA, holds an MSc. in Food Science and Nutrition from JKUAT Nairobi, BSc Food Science and Technology , Certificate in Leadership and Business from Oklahoma State University, USA and Post Harvest and Wasted food from Wageningen, the Netherlands. Mercy has worked with USAID Feed the Future, iAGRI, AINFP and Tubocha projects, with Bill and Melinda gates-UNDP, Presidential Bureau’s projects, and with FAO/RUFORUM research dissemination project. She has trained more than 5,000 food processors, 52% being women. She has also worked in academia and as Managing Partner for TanFoodTech Consultancy where she has developed and implemented more than 15 Product development and food safety initiatives.
Mercy has published papers and has presented in a number of scientific conferences in the USA, Netherlands, Kenya, Uganda , Zambia, Singapore and the South Africa.
