Theresia Bruno Jacob is a Food Scientist and Technologist and a Research Officer at the Tanzania Agricultural Research Institute (TARI) in Morogoro, within the Post-Harvest Management Department. She holds a Master’s Degree from Wageningen University & Research, Netherlands.
Her expertise includes Food Processing, Food Safety and Quality Assurance, Post-Harvest Technology, Research and Development, Microbiology and Biotechnology, and Product Development. Her work focuses on reducing post-harvest losses, product development, value addition, and food innovation. She is also engaged in entrepreneurial ventures in dairy production, including yogurt, fermented milk, butter, and ghee—directly supporting TAFST’s innovation and value-addition agenda
